Pumpkin Pie

This is a favorite recipe that I have used for 20 years now.  I hope you all are able to enjoy it!

PRIZE WINNING PUMPKIN PIE RECIPE

Crust

2 c. flour

2 t. sugar

1 1/4 t salt

2/3 c oil

3 T milk

Mix together sugar, flour and salt.  Add in oil and milk.  Mix until it forms a ball.  Pat into pan.  No need to prebake before filling.

Filling

1/3 c granulated sugar

1 t. salt

1 t. cinnamon

3/4 t. ginger

1/4 t. cloves

1/4 t. nutmet

1/4 c. honey

2 c. canned pumpkin

1 c. evaporated milk

2 eggs (beaten)

Mix sugar, salt and spices with honey and pumpkin.  Heat milk to warm.  Add small amount of milk into beaten eggs and stir, slowly adding the rest of the milk.  Pour eggs and milk into pumpkin mixture and blend thoroughly.  Pour on top of crust. 
Bake at 426 for 10 minutes.  Lower temperature to 350 degrees and continue baking 40-50 miinutes or until knife is clean after being inserted in middle of pie.
